After trying the nigiri sushi at 10-20 (and counting) "Japanese" restaurants in and around Palm Beach, I always end up returning to Sushi Simon for the closest thing to authentic Tokyo sushi I've found so far. The fish is unusually fresh, with specialties like uni available only when freshest, and never is any fish cut into unappetizing chewing-gum sticks. The selection of premium sakes is broad, and rolls are available in many inventive combinations. All servers are attentive and serve all tables as needed, resulting in excellent service, even when the restaurant is crowded.Old Japan Hand
